Coconut macaroons

2 whites of eggs.                                                         100 g grated coconut

120 g castor sugar

1 Whisk egg whites and sugar over pot of hot water until mixture is thick and very stiff.

2 Lightly fold in the grated coconut. The mixture should be of a smooth texture.

3 Drop spoonfuls on a  greased baking sheet. Bake in a very slow oven for ¾ hour without browning until firm.
