1 tin salmon or 100g cold boiled fish. 1 lettuce
1 medium-sized cucumber. Mayonnaise dressing
3 tomatoes Salt and pepper
1 Remove skin and bones from fish. Flake it and chop finely and rub through a wire sieve or mince. Mix with 1 tablespoon mayonnaise dressing and seasoning.
2 Peel cucumber, cut in pieces about 5 cm long and make them level so that they will stand firmly.
3 Make a hollow in the centre of each and fill with the prepared fish.
4 Cut a slice off each tomato. Scoop out the pulp and rub through a sieve. Mix the sieved pulp with 1 tablespoon mayonnaise and seasoning. Return to cases.
5 Arrange on a bed of lettuce leaves on a dish. Serve mayonnaise sauce separately.
