Fried brains

 2 pairs calf brains.                                      Bread crumbs

1 beaten egg.                                                 Margarine for frying

A little milk.                                                  1/8 teaspoon grated nutmeg

1/8 teaspoon black pepper.                        Salt

1 Prepare brains. Simmer for 15 minutes in a little milk

2 Separate into uniform pieces. Dry them with a clean cloth

3 Coat with beaten egg and bread crumbs.

4 Fry in hot melted margarine until golden brown on all sides

5 Place on an oval dish, sprinkle with salt, pepper and grated nutmeg and serve hot.
