Palm wine bread

kg flour.                                                                                 250 ml palm wine

450 ml warm water.                                                              1 teaspoon salt

2 tablespoons sugar

1 Dissolve the sugar in the palm wine.

2 Sieve the flour and salt into a bowl

3 Add the liquid to the flour and mix to a soft elastic dough.

4 Knead on a floured board until smooth

5 Put in a floured bowl, cover with a damp cloth, and put in a warm place to rise until it has doubled its bulk.

6 Re-knead lightly on a floured board. Cut into desired shapes. Put large loaves in tins and press down into corners.

7 Allow to ‘prove’ in a warm place for a short time.

8 Bake in a hot oven. Reduce the temperature after 10 – 15 minutes. Cool on a wire tray.
