1 cup rice flour. Sugar to taste
600 ml water. 1 teaspoon lime juice
Method 1
1 Mix the rice flour to a smooth paste with some of the water
2 Put the rest of the water to boil. Remove pan from fire
3 Pour the paste into the pan of boiling water and stir
4 Put pan on the fire and boil gently, stirring all the time until the rice is cooked and the consistency thick.
5 Add the lime juice and sugar to taste.
6 Serve with milk if required.
The lime juice improves the color and flavor
Method 2
1 Put half the quantity of rice flour into a clean calabash lightly from side to side until little balls begin to form. Collect the balls as they form and put on a plate or tray. Sprinkle more waster if necessary and continue until all the flour is used up.
2 Dry the balls in the sun or in a !moderate oven. They will then be quite hard and dry.
3 Mix the rest of the flour with some of the water, and put the remaining water to boil.
4 Put the rice balls into the boiling water and cook gently for 10 minutes, stirring frequently.
5 Add the rice paste and cook, stirring all the time. The balls will be held in suspension.
6 Add sugar to taste, and lime juiice
7 Serve hot or cold
