Bacon, okra, and tomato

500g okra.                                                      2 large tomatoes

3 rashers of bacon.                                       Salt and pepper to taste

1 tablespoon margarine

1 Wash and slice okras thinly. Cook in boiling salted water until tender. Do not stir. Drain well.

2 Cut bacon into small pieces. Slice tomatoes.

3 Fry tomatoes lightly in melted margarine. Remove and keep warm. Fry bacon in the fat and remove.

4 Fry well-drained, cooked okra in remaining fat, Add seasoning and bacon. Simmer for a few minutes. Add fried tomatoes. Avoid stirring as this makes the okra ‘draw'.

5 Serve on a hot dish. Garnish with slices of fried tomatoes.
