Banana pancakes

3 soft ripe bananas.                                                 1 tablespoon sugar

250 ml milk.                                                                Oil for frying

1 egg.                                                                            Nutmeg

125 g flour.                                                                  Pinch of salt

1 Peel and mash bananas in a bowl until smooth. Sieve flour, nutmeg, and salt together.

2 Add flour and milk gradually beating well into a smooth paste. The mixture should be thicker than plain batter

3 Separate the yolk from white of egg. Beat yolk lightly and add to mixture. Add sugar. Beat thoroughly and allow to stand for about half an hour.

4. Meanwhile ‘prove’ frying pan and heat oil and pour into basin leaving enough to cover the bottom of the pan

5 Beat egg white stiffly and fold lightly into mixture.

6 Fry spoonfuls in hot oil. When brown, turn with a broad-bladed knife or toss. Fry other side till brown

7 Drain well and serve hot.
