Bean stew

2 cups of beans.                                            2 large tomatoes

3 dried fish (herring, etc.).                         1 large onion

2 teaspoonfuls ground pepper.                 150 ml palm oil or groundnut oil

Salt to taste

1 Wash and boil beans until they are tender and water has evaporated.

2 Meanwhile prepare fish, grind onion, pepper and tomatoes.

3 Fry fish, onion, pepper, and tomatoes in hot red palm oil or hot groundnut oil. Season to taste.

4 Add beans and some more salt if necessary. Simmer for about ½ hour, when the consistency will be quite thick.

5 Serve with rice, boiled yam, fried plantains, and potatoes, etc. The fish may be omitted, but for a meal it is more nourishing if first-class protein is added.
