Liver stew

500 g liver.                                                    Sliced onion

3 tablespoons oil.                                        Sliced tomatoes

Salt and pepper.                                          2 tablespoons tomato paste

1 Prepare liver and cut in moderate-sized pieces and season

2 Prepare onions and tomatoes

3 Heat the oil in a saucepan and fry liver until slightly brown. Reduce heat.

4 Add onion and fry until slightly brown. Add tomatoes and pepper. Mix tomato paste with a little water, add salt to taste, add thyme or any other flavouring herb.

5 Pour into stew. Cover pan and allow to simmer until consistency is thick and of the right colour.
