Palm oil rice

2 cups rice.                                                             1 onion

3 smoked fish.                                                        50 ml palm oil

2 garden eggs.                                                        600 ml water

Salt and pepper to taste

1 Grind or slice onion, grind pepper. Put into a saucepan with the dried fish, palm oil, water, and salt. Bring to the boil and simmer until the fish is partly tender and the raw taste of the palm oil has disappeared.

2 Wash and drain the rice; add to other ingredients; add garden eggs, bring to the boil and boil briskly until most of the water is soaked up. If rice is still hard, add some more water.

3 Put lid on lightly, reduce heat and allow to cook until grains are soft. This is a nourishing and economical meal. Okras may be used instead of garden eggs.
